How To Cook Quick Chicken and Cheese Muffins. SUPER EASY! Chicken Cheese Muffins - one of my favorite recipes. It’s very nice as a snack, for a party, for a picnic in the summer. Or for your kids when they go to school. Combining eggs, cheese, and chicken, these are perfectly portable for breakfast on the run. The recipe is very simple. There is a basic recipe, and then, you can add whatever ingredients you like. Recipe Ingredients Makes: 12-15 muffins 3 eggs, lightly beaten 1/2 cup (125 mL) milk 1 cup (140 grams) self-raising flour 1 tablespoon vegetable oil 1 1/2 cups chicken fillet, cooked, chopped 1 1/2 cups green onions, finely-chopped 1 1/2 cups tomatoes, chopped 1 tablespoon parsley 1 1/2 cups cheese, grated Salt, pepper, spice to taste Directions Preheat the oven to 400°F (205°C). In a bowl beat eggs lightly and combine with milk, self-raising flour and vegetable oil. In another bowl mix chicken fillet (cooked, chopped), green onions, tomatoes, parsley, 1 cup cheese (grated). Add salt, pepper, spice (to taste). Pour the flour mixture into the chicken-cheese mixture and mix to combine. Pour batter into a muffin pan prepared with paper or silicone liners. Fill liners about 3/4 full. Sprinkle with 1/2 cup cheese shredded cheese. Bake in a preheated oven to 400°F/205°C for 20-25 minutes or until golden. Using a toothpick inserted in the center to test for doneness. Remove from the oven and let stand to cool five minutes. If you don’t have self-rising flour and you have a recipe that calls for it, you can make your own by combining 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt. Bon Appetit!
